Common Questions

Are you a restaurant?

Nope! We are a pasta shop, selling ravioli to cook at home. We serve a couple of hot lunch specials Tuesday through Saturday until 3pm. There’s no table service, but we do have a couple of tables where you can eat in our shop.

Do you make gluten free ravioli?

Sadly no. Our space is not large enough to have a dedicated gluten free production room.

Where do you get your bread from?

Our semolina bread comes from Melone Brothers Bakery. They have two bakeries, one in Staten Island and one in New Jersey. The bread arrives frozen and we bake it the last 5 minutes in our shop.

Is your shop wheelchair accessible?

Yes! We have two designated handicap spots next to the front door. The door to our shop has a small lip, but once inside everything is a smooth, contiguous floor with wide aisles. If you’d prefer for us to bring something out to you, give us a call when you’re parked in front!

Do you sell gift cards?

Yes! We have gift cards that can be purchased in any amount. Come into the store or give us a call if you’d like us to mail one to a recipient.

What kind of flour do you use?

We use two flours to make all our pasta. An “00” Italian pasta flour from Caputo and a durum flour that is milled in St. Louis from North American grown wheat.

How long does fresh ravioli last?

Fresh ravioli should be eaten the day it’s made or the next day at the latest. All of our frozen ravioli, tortellini and pasta have best by dates on them. We set our dates to ensure the best flavor and texture of the ravioli.

Are your ravioli organic?

No, we are not an organic manufacturer. Some of our ingredients come from organic farms in the Hudson Valley, but we use many ingredients that are not certified organic.

Where does your ricotta come from?

We use ricotta impastata - a special stiff ricotta made for ravioli and cannoli - that comes from Grande Cheese in Wisconsin. We’ve tried many ricottas while doing recipe development and this is hands down the creamiest one we’ve found.

Do you have vegan ravioli?

Yes! It is made with vegan pasta (no eggs) and a chickpea based filling (no cheese).

Do you sell your products wholesale?

Yes we offer many of our raviolis flavors (and cheese tortellini!) at wholesale prices to local shops and restaurants.

Do you deliver?

Yes, we deliver weekly in the Hudson Valley.

Can you make custom pasta/ravioli for my restaurant? Or co-pack for my store?

Yes, within our current line up we have ability to customize to fit your menu. With sufficient lead times we can make co-packed ravioli for you. Reach out to ask about options and minimum quantities.

Do you wholesale sauce, lasagna, tiramisu, or sandwiches?

Nope, just our ravioli, pasta and tortellini.

How do I open an account?

Can you do sandwiches for my party?

Absolutely! We can offer any of our 3-4 sandwiches from our current menu for catering. We wrap whole or half sandwiches individually and label them with our cute sandwich stickers. Check with us for any dietary restrictions.

Can you cater our work lunch?

With pleasure! We deliver hot lunch within Coxsackie, including lasagna, meatballs and baked pasta. Check with us for delivery further afield.

Can you cater our wedding?

Probably not. We don’t offer any on-site staffing for heating & serving. If you’re looking for something more DIY we can certainly set you up with large trays of lasagna, etc.

How far in advance do I need to order?

For small events (10-20 people) please reach out 2-3 days before you’d like to pick up. For large events (especially 50+ people) we need to know a few weeks in advance. And if you have a special request, please give us extra time. If we need to bring in special ingredients or develop a new recipe, that takes time!
